1 cup pitted prunes (packed tightly into measuring cup)
1/2 cup ghee (or butter or vegetable shortening depending on your own dietary preferences)
1 large egg
1 teaspoon baking soda
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup almond meal/flour
2 tablespoons flaxseed meal
2 tablespoons coconut flour
3 tablespoons tapioca starch
1 cup (or less) of dark chocolate chips
sprinkle course ground sea salt
Pre-heat oven to 350 degrees - makes approximately 16-18 cookies
Start by putting 1 cup of prunes in the food processor. Grind until a thick sticky paste forms. There will still be bits and pieces of prune - that is ok, it helps add to the delicious chewy texture of these cookies. Cream together prune paste and ghee. Add in egg, and vanilla. Mix well. Combine dry ingredients and slowly add to prune mixture. Mix well. Stir in chocolate chips.
The dough will be very sticky but still able to form into a ball. Slightly flatten the balls on the cookie sheet and sprinkle a tiny bit of sea salt on top. Bake for about 15-17 minutes depending on your oven. They should still be soft and just developing a deeper color around the edges.
Allow to cool (if you can wait that long) and enjoy!
